Winter is well and truly here; time for the hat, scarf and comfort food. There really is nothing better to thaw you out when you’re just in from the cold than this ‘all-in-one’ winter warmer. Simple and so tasty, this Sausage and Pear casserole makes for a super alternative to stew. 

Sausage and Pear Casserole
Ingredients for Four
1 tbsp olive oil
12 good quality pork sausages
1 onion, sliced
2 leeks, sliced
2 aubergines, chopped into 2cm cubes
2 firm pears, peeled, cored and quartered
Knob of butter
1 tbsp plain flour
400ml good chicken stock
250ml white wine
1 tbsp Dijon mustard
Few sprigs of thyme

Method
Preheat the oven to 180C. Heat the oil in a heavy-based casserole dish over a high heat. Add the sausages and cook for 6-8 minutes until nicely browned. Remove and set aside. Add the onions, leeks and aubergines to the dish and cook for 5 minutes until softened and beginning to colour. Add the pears and a knob of butter and fry for a further 2 minutes. Stir in the flour until combined, cook for a further minute then return the sausages to the casserole. Stir in the stock, wine and Dijon mustard and bring it to the boil. Add the whole sprigs of thyme and season with salt and pepper. Remove the dish from the heat, cover and cook in the oven for 25-30 minutes. Delicious served with some crusty bread.
